I know Sandy's Nutty Nieces is sort of an early over since it's one of the last season 12 episodes produced (325-1249) but it was one of the first episodes released

Packaging order is based on when the episode is completed, production codes are based on when it's storyboarded. For example, Hello Bikini Bottom was conceived between The Way of the Sponge and Are You Happy Now, but it ended up being the final episode in that season to be completed.
 
The first couple seasons of Adventure Time look outdated and they’re still in HD
That's probably because the lines in modern cartoons are a lot more clear-cut and very thin. I suspect Family Guy was influential in this general change in animated shows as it adopted the razor thin-line animation early on, and then other shows followed suit.
