I highly recommend using an NES SCART cable + SCART to HDMI upscaler to get a pseudo-RGB picture out of an old console.
Although it's a nearly-perfect picture, it tends to get that "checkerboard" pattern in the game graphics that is barely noticeable in some instances.

This is all well and good, though I’ve never owned a retro console that had that much cable-related trouble. It’s interesting how people want to improve the picture quality of retro games, when I think playing them on an old standard definition TV is part of the charm of revisiting them.

They do sell a special type of RGB component cable that works with a PVM (personal video) or BVM (broadcast video) monitor. Unlike consumer-grade CRT TV sets, the PVM and BVM monitors were only sold to TV stations like ABC, NBC, CBS, FOX, etc. for professional use, and were not available for sale to the general public when first used. You can find PVMs and BVMs for sale on eBay.

RGB on the some of the older consoles like the NES is super nice.. very crisp. I don't bother with RGB on N64 though (which is the console I use the most) since s-video is basically identical as far as how clear the picture is... mostly just the little bit of color difference. Can make s-video basically look perfect with the right capture settings (if you're trying to make it look good for capture devices that is.. which is my priority usually over how it looks on my own TV). I do have a nice PVM CRT though too.
Guess it's a pretty niche group though for people that aren't just using emulators or virtual console type stuff on their LCD TVs.
