We'll know when SpongeBob SquarePants really does come to an end because Nick will most likely announce the last episodes or the writers/voice actors will announce the news on their Twitter or Facebook accounts!

I know when the final season comes out they would call it "SpongeBob SquarePants Forever" like Disney Channel did with Hannah Montana
